Gazpacho - Spanish chilled tomato soup

An all-time favourite in our Retreats.

There is nothing better than sun-riped deep red tomatos as we get them in Fuerteventura from the bio-market and our own garden. And the classic Gazpacho is a nice way of enjoying them for a light lunch on a hot day. The good news: it is very easy and quick to prepare.



8 tomatos

1 small cucumber

3 spoons of extra virgin olive oil

1-2 pieces of old bread (depending on consistency)

1 teaspoon of balsamic

1/4 teaspoon of sea salt

a bit of black pepper (grinded)

Note: The yogic diet avoids garlic and onions since they upset the mind. The traditional spanish recipe would add a bit of fresh garlic.


Clean the tomatos and cucumber, maybe peel half of the cucumbers skin to make it smoother and blend all the ingredients in a blender until you get a nice texture. Allow to cool 30 min. in the fridge before serving.

Serving suggestions:

Serve with nice bread, cheese and olives. N Guatn...
